Pommies Cucumber Salad

The name speaks for itself. This refreshing recipe will be a great addition to your table full of BBQ or a nice brunch. The prep time may be long, but the work is limited. Enjoy!


2 cucumbers (thinly sliced)
1 half bottle of Pommies Dry Cider
15ml of apple cider vinegar
1 tablespoon of salt
90 grams of sugar
3 tablespoons of fresh dill (chopped)
Fresh ground black pepper


Begin to slice the cucumbers. Place in a strainer, adding salt between each layer. Place strainer over a bowl and leave to drain for 1 hour.

Rinse the cucumbers with cold water to remove all salt. Pat dry using absorbent kitchen paper.

Add the sugar, Pommies and vinegar to a saucepan and heat gently until the sugar is dissolved. Once the sugar is dissolved, remove from heat and leave cool.

Place cucumber slices in a bowl and pour over the chilled cider mixture. Leave to marinate for 2 hours.

After the two hours is up, drain the cucumbers and add dill and pepper for taste. Mix well. Chill until serving time.
